Game Burger with Hot Cabbage Salad

Lovely game burger with hot cabbage salad and fried onions.

Ingredients

Burgers
  • 1200 g game mince

  • 4 egg yolks

  • 200 ml Santa Maria BBQ Sauce Bourbon Whiskey

  • 50 ml olive oil

  • 10 brioche buns

  • 10 bacon rashers

  • Santa Maria Rock Salt

  • Santa Maria Tellicherry Black Pepper

Cabbage salad
  • 450 g cabbage, shredded

  • 200 ml crème fraiche

  • 100 ml Santa Maria Chipotle Sauce

Fried onions
  • 4 red onions

  • 2 shallots

  • 3 garlic cloves

  • 100 ml Santa Maria Bourbon BBQ Sauce

  • 100 g butter

  • Santa Maria Triple Pepper 235 g

How to prepare

  • Mix the mince with oil, BBQ sauce, spices and egg yolks. Make 10 patties and fry them. Also fry bacon rashers.

  • Mix the cabbage salad and put in the fridge.

  • Fry roughly chopped onions, shallots and garlic in butter and Triple Pepper.

  • Add some BBQ sauce let it get warm.

  • Put the patties, onion mix, bacons in the buns.

  • Serve with the cold cabbage salad.
