Coffee-flavored cheesecake flavored with whiskey

Bottom
  • 75 g butter

  • 200 g caramelized sugar cookies

Filling
  • 5 gelatin leaves

  • 2 dl whipping cream

  • 200 g quark

  • 400 g cream cheese

  • 1 dl sugar

  • 1 tsp vanilla sugar

  • 1 ½ dl Paulig Cold Brew Coffee concentrate

  • ½ dl whiskey

Cold Brew gelé
  • 1 gelatin leave

  • ½ dl water

  • 2 tsp sugar

  • 1 dl Paulig Cold Brew Coffee concentrate

How to prepare

  1. Put a baking sheet on the bottom of springform pan and cover the edges with a baking plastic.

  2. Crumbe the cookies, melt the butter and add to cookie crumble. Push the crumbles tight on the bottom of the pan.

  3. Prepare the filling. Let the gleatin leaves soak in a cold water. Whip the cream into a froth.

  4. Mix quark, cream cheese, sugar and vanilla together, add Cold Brew concentrate.

  5. Heat the whiskey and melt the softened gelatin leaves in the warm liquid. Pour to the cake dough. Finally add the whipped cream, first 1/3 and then the rest.

  6. Pour the cake dough in the springform pan and let it sit for 4 hours or overnight.

  7. Let the gelatin leaves for the gelé soak and soften. Bring water and sugar to boil. Melt the softened gelatin leaves to hot liquid. Add Cold Brew concentrate and mix well. Pour the liquid on top of the cake and let it congeal well before serving.
