Classic Pulled Pork
Ingredients
1.2 kg boneless pork roast
Santa Maria Rock Salt, to rub the meat
Santa Maria Tellicherry Black Pepper, to rub the meat
300 ml Santa Maria Bourbon BBQ Sauce
500 g lettuce
2 beefsteak tomatoes, sliced
10 Santa Maria Tortillas 12”
200 ml crème fraiche
300 ml Santa Maria Chipotle Sauce
100 g Santa Maria Nacho Chips, crushed
4 medium red onions
300 g romaine lettuce
Fresh coriander leaves to garnish
How to prepare
1. Preheat the oven to 100 °C.
2. Rub the meat with salt and pepper. Coat it with BBQ Sauce, then seal in a frying bag or a vacuum bag.
3. Put the meat in a covered oven-proof dish. Cook slowly for 9 hours. When meat is done it should fall from the bone and be easily pulled apart with two forks.
4. Put approx. 120 g pulled pork on each tortilla. Add crème fraiche and salad.
5. Finnish with chipotle sauce, crushed nacho chips and chopped coriander leaves.
